Planning menus, estimating food and labour costs, and ordering food supplies

Monitoring quality of dishes at all stages of preparation and presentation

Discussing food preparation issues with Managers, Dietitians and kitchen and waiting staff

Leading all the kitchen team, including Cook and other staff

Demonstrating techniques and advising on cooking procedures

Preparing and cooking food

Explaining and enforcing hygiene regulations

May select and train staff

May freeze and preserve foods

Task & responsibilities

· Planning, designing and modifying Restaurant menus taking inputs from senior management, from the Restaurant Manager and other cooking staff

· ⁠Introducing new recipes and discussing recipes and cooking procedures with the senior management

· ⁠Prepare and/or supervise the cooking of all dishes on menu

· ⁠Supervise, guide and co-ordinate activities of all cooks in the kitchen

· ⁠Oversee and supervise all kitchen staff

· ⁠Planning for food needs for big events like birthday parties, marriage parties or other functions at the venue.

· ⁠Ensure consistent and smooth functioning of food production areas

· ⁠Exercising effective control over stock purchasing and storage of all food and related items in temperature controlled environment

· ⁠Order and/or requisition supplies to ensure smooth operations

· ⁠To ensure minimum wastage by careful supervision of food preparation methods

· ⁠Implementing quality control procedures regarding preparation and service of food while maintaining attractive presentation with the aim to exceed patron requirements

· ⁠Receiving and actioning feedback of customers relating to food and/or hygiene in coordination with the Restaurant Manager and in accordance with the company policies

· ⁠Maintaining cleanliness & hygiene of the kitchen in accordance with the food safety laws

· ⁠Training cooks and junior staff and demonstrating new cooking techniques and equipment to staff

· ⁠Calculating the cost price of food items in consultation with the management and controlling overall food cost budget

· ⁠Liaising with Restaurant Manager/Senior Management regarding day to day restaurant operations


Qualification & experience

  • Minimum 1-2 years of experience working as a chef in a comparable Restaurant and hotel hospitality Services.
  • Relevant qualifications in hospitality or related discipline.
  • Proven knowledge and practical experience in food safety regulations and compliance.
  • Demonstrated success in managing high-volume, cook-fresh and/or cook-chill food service operations at a middle/senior level.

Desirable

  • Strong organizational and administrative skills, including proficiency in relevant computer systems.
  • Experience in quality assurance systems and standards.
Other Requirements

  • Must hold, or be willing to obtain, a current National Police Clearance.
  • Full working rights in Australia are required for this position
