Full-Time Head Barista – Rustica Highpoint

Location: Rustica Highpoint Café, Highpoint Shopping Centre, Maribyrnong, VIC Start Date: Immediate start Salary: $65,000 per year (Full-Time)

Rustica Highpoint is seeking an experienced and highly skilled Head Barista to lead our coffee program. This role requires advanced-level barista expertise, strong leadership capability, and the ability to maintain exceptional quality standards in a fast-paced café environment.

We are looking for someone passionate about specialty coffee and hospitality, who leads by example and takes pride in consistency, workflow efficiency, and team development.

Role Requirements

  • Flexible availability

  • Minimum 2–3 years of relevant experience in a busy café

  • Advanced-level barista skills are essential

  • Proven experience as a senior or lead barista

Key Skills You Will Bring

  • Advanced knowledge of coffee extraction, calibration, grind adjustment, and recipe profiling

  • Strong latte art skills and consistency across high-volume service

  • Ability to manage workflow and maintain speed without compromising quality

  • Confidence leading shifts and setting service standards

  • Experience mentoring and training junior baristas

  • Excellent customer service and communication skills

  • Strong understanding of stock control and waste minimisation

Key Responsibilities

  • Oversee daily coffee operations ensuring consistent quality and efficiency

  • Lead, train, and mentor baristas in advanced coffee preparation and service standards

  • Maintain strict calibration, recipe consistency, and workflow optimisation

  • Monitor and maintain coffee equipment, coordinating servicing and deep cleaning

  • Manage ordering of coffee and related supplies

  • Uphold food safety, hygiene, and workplace health and safety standards

  • Handle customer feedback professionally and effectively

  • Work with management on seasonal coffee offerings and menu development

  • Lead the team and manage operations in the absence of the Venue Manager

As Head Barista, you will set and maintain high standards for coffee quality, customer service, and operational efficiency. You will play a key leadership role in shaping our coffee culture and ensuring every guest at Rustica Highpoint receives an exceptional café experience.
