Borg's was established in 1960 in Melbourne as a family business manufacturing specialised, Mediterranean style filled pastries known as pastizzis. Today the company operates from a custom-built factory producing filled pastizzis and finger foods. Borg's is now also one of Australia's largest producers of puff pastry and shortcrust with products available in all large retail and food service channels Australia-wide.

Role Purpose

To drive the research and development of new products and continuous improvement of existing food products. This involves formulation, product trials, testing, and documentation, ensuring compliance with quality, safety, and regulatory standards.

Major Responsibilities

  • Develop recipes for new products

  • Manage the full product development lifecycle—from brief to scale-up and commercialisation

  • Sourcing of all ingredients and materials to deliver on product briefs

  • Organise and lead factory trials for new product development (NPD)

  • Review and optimise existing formulations to reduce costs and enhance quality

  • Support production teams by reviewing processes and preparing SOPs

  • Prepare product documentation including specifications, PIFs, labels, artworks, and shelf-life tests

  • Conduct sensory evaluation sessions

  • Provide technical input for packaging and process optimisation

  • Collaborate effectively with cross-functional teams including QA, Marketing, Operations, Procurement, and Commercial

  • Ensure compliance with food safety standards, provide technical guidance, and stay ahead of industry trends and innovation in ingredients, packaging, and systems.

  • Lead strategic, complex innovation and renovation projects, ensuring resourcing, budget, and timelines are aligned to deliver end-to-end success.

  • Support Quality Assurance function as required.

About You

  • Degree in Food Science, Nutrition, or a related discipline

  • Minimum 5 years’ experience in R&D within the food industry

  • Experience working in FMCG, ideally within bakery or pastry manufacturing

  • Strong technical and analytical skills with a practical, solutions-focused mindset

  • Clear communicator with strong attention to detail

  • Ability to collaborate effectively across cross-functional teams

  • Commercial awareness and passion for food innovation

  • Working knowledge of FSANZ and export requirements (Asia experience highly regarded)
