Business / Operations Manager – Third Wave BBQ

This is not an onboarding role. You're expected to deliver from day one.

Third Wave BBQ is scaling fast — 5 venues open, 4 more signed, and 7 to 10 new sites targeted this year alone. We have a clear goal of 50 venues across Australia and internationally in 3 years, and franchising is already in motion.

We need an operator who can step in, assess quickly, and start moving the needle immediately.

No ramp-up period. No grace period. Work and deliverables start from the moment you walk in.

The Role

Hands-on Business / Operations Manager responsible for multi-site performance, systems, and franchise rollout. You'll own outcomes across BOH and FOH, level up venue leaders, and play a lead role in opening new corporate and franchise venues.

This role excludes marketing. Everything else operational is yours.

What You'll Be Doing

Multi-site performance

  • Own and drive KPIs across venues: COGS, labour %, wastage, GP, profitability

  • Coach venue managers and department leaders — build accountability fast

  • Identify operational bottlenecks and fix them permanently

Systems, SOPs and training

  • Build and enforce scalable systems: SOPs, checklists, training pathways, QA routines

  • Create standards that corporate teams and franchisees can execute without handholding

  • Run audits and lock in compliance across all sites

Franchise and new venue rollout

  • Lead opening playbooks, pre-opening timelines, training plans, and go-live execution

  • Support franchisee onboarding and operational setup to standard

  • Coordinate suppliers, equipment, stock and procedures for smooth launches

Suppliers, stock and compliance

  • Strengthen supplier relationships, pricing, and inventory controls

  • Improve forecasting, par levels, stocktake accuracy and wastage reduction

  • Lock in food safety and compliance across all locations

  • KPIs stabilised and visibly improving across all venues

  • SOPs and training systems embedded and followed without chasing

  • Leaders performing with clear cadence and accountability

  • New venues opening faster and more consistently

  • Franchise partners compliant, confident, and operating to standard

  • Multi-site Operations, Area or Regional Manager (hospitality or QSR)

  • Franchise Operations (systems, compliance, audits, performance coaching)

  • Senior FOH or BOH leader stepping up — GM, Head Chef, or Executive Chef with strong people and cost systems
